This is my take on the classic Nicoise salad, but upgraded, and I must say, it’s way better than the original. This is a nutrient packed salad, loaded with fresh veggies, roasted veggies, healthy fats, filling protein & a delectable dressing. It’s not your typical simple salad, this one truly hits the spot and leaves you feeling satisfied yet energized. Enjoy this for lunch or dinner, this salad is truly a balanced, nutritious and fresh meal that your body will love!

Serves 2 | Prep Time: 45 minutes

NICOISE SALAD ingredients
  • 2 handfuls of spinach
  • 2 boiled eggs, sliced – see steps for the perfect egg
  • 2 tomatoes cut in quarters
  • 1 avocado, sliced
  • 1 roasted sweet potato & 1 red onion – see steps
  • 1 can of tuna in olive oil
  • 1 celery stock, chopped
  • 1/4 cup of pitted kalamata olives
  • Olive oil to drizzle
  • Garnish with basil leaves
  • Salt & pepper to taste
Cilantro sauce Ingredients
  • 1/2 cup of plain greek yogurt
  • Juice from 1 lime
  • 1 cup of cilantro
  • 1/2 cup of fresh dill
  • 2 garlic cloves
  • 1/2-1 teaspoon of crushed red pepper, to taste
  • Salt & pepper to taste
  1. Roasted Sweet Potato & Onion: Preheat oven to 425F and line a baking sheet with parchment paper. Scatter the onions and evenly place the sweet potato rounds on top, drizzle with olive oil. Add salt & pepper. Roast for about 20 minutes, flip the potatoes, then roast for another 15 minutes – until onions are crispy but not burnt!
  2. Boiled Eggs: My technique for the perfect egg: place eggs in a pot filled with cold water + salt, bring to a boil. When water is boiling set your timer for 3 minutes. Remove eggs from boiling water and rinse with cold water. Peel eggs and set aside to let cool.
  3. Cilantro Sauce: While veggies are baking, blend all cilantro sauce ingredients until smooth.
  4. Tuna: Mix canned tuna in a bowl with the chopped celery, salt, pepper and the Cilantro Sauce.
  5. Assembly: Place everything together in a large salad plate. Start with a bed of spinach, scoop the tuna in the middle, then arrange around the plate the rest of the ingredients, add the olives & then drizzle with olive oil. Garnish with basil leaves and add salt & pepper to taste. Enjoy!
