The Perfect Summertime Healthy Recipe!

This next level delicious recipe has become my favourite summer meal & I’m sure you’ll agree! Salmon burgers are a wonderful healthy alternative for grilling season! Swap out a heavy beef burger for a lighter salmon burger, it’s perfect for summer weather! This is the ultimate meal to enjoy while eating outside with the family during these idilic warmer days! These burgers come together so easily they’re perfect for a lunch or weeknight dinner when you want something quick that doesn’t skimp out on taste! It has a crispy outside, flaky inside, and a perfect juicy texture, not to mention lots of nutrition, yes please! Salmon burgers are rich in omega 3’s, high in protein, & packed with fresh herbs to truly give it a burst of flavour!

Prep time: 30 min | Serves 6 

Salmon Patty Ingredients
  • 4  cans Wild Caught Pink Salmon (skinless & boneless)
  • 3 scallions, finely chopped
  • 2 tablespoons capers, finely chopped
  • 1 egg, well beaten
  • 3 garlic gloves, finely chopped
  • 1/2 cup gluten-free breadcrumbs
  •  2 tablespoons dijon mustard
  • Juice from 1/2 lemon
  • Bunch of dill & parsley, finely chopped
  • Salt & pepper to taste
Cilantro sauce Ingredients
  • 1/2 cup of plain greek yogurt
  • Juice from 1 lime
  • 1 cup of cilantro
  • 1 tablespoon of honey
  • 1/2 teaspoon of crushed red pepper
  • Salt & pepper to taste
burger Ingredients
  • 6 gluten-free hamburger buns (I like using: INEWA Humburger Buns)
  • 2 English cucumbers, thinly sliced lengthwise
  • Arugula, to garnish
  • Bunch of chopped fresh dill, to garnish
  • Crushed red pepper flakes, to garnish
  • Salt & pepper to taste
  • Avocado oil
  • Garlic ghee
Steps
  1. Cilantro Sauce: Using a blender or vitamix, combine all ingredients until thoroughly blended. Keep in the refrigerator until ready to serve
  2. Salmon Patties: In a large bowl combine all ingredients and mix well with hands, shape into 6 equally sized patties
  3. Heat pan to medium heat & drizzle with avocado oil, grill patties for 3 to 4 minutes on each side or until the salmon is cooked through
  4. Toast the buns and lightly slather with garlic ghee butter
  5. Put it together: Spread the cilantro sauce on the bottom bun, then place the patty and top it with arugula. Garnish with cucumber slices, chopped dill & crushed red pepper flakes
JK’s Tips:
  • Serve: Accompany the salmon burgers with a crunchy side, such as potato chips made with avocado oil! Pair with simple salad, using the leftover cilantro sauce as a dressing! Or for a more satisfying side opt for the Roasted Eggplant & Farro Salad or my go-to Rainbow Salad.
  • Grilling: If you’ve got a grill, break out that apron and throw these patties on the grill! I recommend cooking them on a sheet of aluminum foil to keep all the juices!
