You’ll have no problem getting everyone to the table with these tasty dinner recipes! These simple yet satisfying recipes pack a nutritional punch and don’t skimp out on flavour. Each recipe is high in protein, healthy fats, good carbs and loaded with fresh veggies, what more do you need! This arsenal of our favorite quick and easy family meals, will satisfy the entire table — even the kids. Pair the chicken or salmon recipe with the salad recipe and you have a quick & complete meal that makes for perfect leftovers as well! These stress-free meals give you the freedom to get creative in the kitchen and make your own tweaks & additions, so pour yourself a glass of wine and get cooking!

ORGANIC CHICKEN HARISSA WITH FRESH VEGGIES

Prep time: 10 min | Cook time: 90 min

Ingredients
  • Whole organic chicken
  • 4 mixed color bell peppers
  • 1 large red onion
  • 2 full tablespoons of harissa paste
  • Extra virgin olive oil
  • Balsamic glaze
  • Pink himalayan sea salt & black pepper
  • 4 sprigs of fresh mint
Steps
  1. Heat oven to 350F
  2. Remove seeds from the peppers and slice into large chunks, quarter the onion and break into slivers, evenly place the veggies on a large cooking dish
  3. Cut down the back of the chicken to butterfly it and place it on top of the veggies in the dish
  4. Spread the harissa paste over top of the chicken, add a drizzle of olive oil & balsamic glaze
  5. Season with salt & pepper to taste
  6. Roast the chicken, uncovered, for about 90 minutes
  7. Remove and let cool, garnish with fresh mint prior to serving
JK’s Tips:
  • I added steamed french green beans to complete this delicious dish! Bon appétit!

ORGANIC PESTO SALMON en PAPILLOTE

Prep time: 10 min | Cook time: 15 min

Ingredients
  • Organic wild caught salmon fillets
  • Organic pesto
  • Chopped red onions
  • Freshly squeezed lemon juice
  • A drop of white wine
  • 2 tsp. grated ginger
  • Extra virgin olive oil
  • Pink Himalayan sea salt & black pepper to taste
  • Optional: Dijon mustard
Steps
  1. Heat oven to 400. Line a baking dish with parchment paper. Lay salmon fillets on paper.
  2. Generously spread pesto over top of salmon, you can also use dijon mustard!
  3. Sprinkle red onions on salmon
  4. Squeeze lemon juice around, not on top of, the salmon, and arrange lemon slices down the length of the fillet
  5. Drizzle salmon lightly with olive oil
  6. Add a touch of white wine around the salmon
  7. Season with salt & pepper to taste
  8. Fold the parchment paper over the salmon and cinch the paper together by folding it over itself along the edges.
  9. Cook for about 10-12 minutes – the key is not to overcook it as the salmon continues to cook even once removed from the oven!
JK’s Tips:
  • Pesto: If you are using store bought pesto be sure it is olive oil based and doesn’t contain inflammatory oils such as canola or sunflower oil!
  • Wild Caught Organic Salmon vs. Farmed Salmon: Wild caught organic salmon is higher in Omega-3 fatty acids, is leaner, cleaner and better for the oceans!

JK’S GO TO RAINBOW SALAD

Prep time: 10 min | Cook time: 15 min

Ingredients
  • Radishes
  • Avocado
  • Celery
  • Spinach
  • Cherry tomatoes
  • Broccoli
  • Red onions
  • Coloured bell peppers
  • Quinoa
  • Granolust: Rosemary Parmesan Crunch 
  • My go to dressing: olive oil + balsamic + squeeze of lemon juice + salt & pepper
Steps
  1. Mix all ingredients together & voila!
  2. Optional: For an extra protein kick add leftover salmon, chicken or add a hard boiled egg!
